Los Monteros Cava is produced from carefully selected grapes grown in the vineyards of Requena and picked early September. Following a cold maceration in pneumatic presses, the must is fermented in stainless steel tanks at 57F (14C). Tirage, the bottling of the still wine and the secondary fermentation in the bottle, begins in January. The cava is aged in bottle for a minimum of nine months before being disgorged, receiving a dosage, and being labeled. Expect a clean, delicately floral notes with citrus tones, a long finish, and a creamy texture. This is a great choice for an aperitif.

90 points from VINOUS: Bright violet. Pungent cherry pit, cassis and licorice scents are sharpened by a peppery nuance. Chewy and focused on the palate, offering bitter cherry and dark berry flavors and a touch of espresso. Dusty tannins frame a long, nervy finish that echoes the cherry note. This is a pretty serious wine for its price category.
